Paneer is a type of cheese that is commonly used in Indian cuisine. It is made by curdling milk with an acidic substance, such as lemon juice or vinegar. Here is a simple recipe for making paneer at home:

Ingredients:

  • 1 gallon whole milk
  • 1/4 cup lemon juice or white vinegar

Instructions:

1) Heat the milk in a large pot over medium heat, stirring occasionally, until it comes to a boil.

2) Reduce the heat to low and add the lemon juice or vinegar. Stir the mixture gently until the milk curdles and separates into curds and whey.

3) Line a colander with a cheesecloth or thin kitchen towel and place it over a large bowl. Pour the curdled milk mixture into the colander and allow the whey to drain into the bowl.

4) Gather the edges of the cheesecloth or towel and twist it tightly to squeeze out any remaining whey.

5) Place the paneer in the colander and put a heavy object, such as a pot or a bowl filled with water, on top of it. Allow the paneer to press for 30 minutes to an hour.

6) Remove the weight and the paneer from the colander. The paneer is now ready to be used in any recipe.

Here are a few ideas for using paneer in dishes:

  • Paneer Tikka: Cut the paneer into small cubes and marinate it in a mixture of yogurt, spices, and lemon juice. Skewer the paneer cubes and grill or broil them until they are lightly charred and cooked through.

  • Saag Paneer: Cut the paneer into small cubes and stir-fry them until they are lightly golden. Add a mixture of cooked spinach, spices, and cream to the pan and simmer until the sauce is thick and creamy.

  • Paneer Butter Masala: Cut the paneer into small cubes and stir-fry them until they are lightly golden. Add a mixture of diced onions, tomatoes, and a blend of Indian spices to the pan and cook until the sauce is thick and fragrant. Finish the dish with a splash of heavy cream.

  • Paneer Korma: Cut the paneer into small cubes and stir-fry them until they are lightly golden. Add a mixture of diced onions, tomatoes, and a blend of Indian spices to the pan and cook until the sauce is thick and fragrant. Finish the dish with a splash of coconut milk or heavy cream.
